2011 Good Food Awards Preserves Winner
Stephanie McClenny uses Texas Everbearing Figs for her Texas Fig Preserves and tries to source from Texas farms as much as possible. It is important for her to forge relationships with her surrounding farmers as well as educate herself about the ins-and-outs of her trade, including fruit orchards and beekeeping. The farms she works with use integrated pest management and thereby cultivate without the use of synthetic pesticides or herbicides. For Stephanie, the biggest challenge she confronts is explaining the idea of seasonality. She believes that “people need to understand what is available and why.” Stephanie is excited by the new trend towards sustainability and seasonality but hopes for continued consumer education in the coming years.
